Hearty Sausage Soup

  • 3 Tbsp. olive oil
  • 1 (14oz) smoked beef sausage sliced into rounds
  • 1 small head cabbage shredded
  • 1/2 pound chopped potatoes
  • 5 cups chicken broth
  • 1 (28 oz) can diced fire roasted tomatoes, undrained
  • 1/2 teaspoon crushed red pepper
  • salt and pepper



Step 1

Warm oil in saucepan and and sausage to cook until browned. Add cabbage and potatoes about 5 minutes until cabbage starts to wilt. Pour in broth and tomatoes, add crushed red pepper and salt and pepper. If necessary add water to make liquid raise above vegetables. Raise heat and bring to a boil, then simmer about 15 minutes, until potatoes and cabbage are tender.
