Lentil Sloppy Joes

Ingredients
- 2 cups dry lentil, rinsed
- 8 cups water
- 1 clove garlic, whole
- 1/2 tsp salt
- 1 large onion, chopped
- 3 cloves garlic, crushed and minced
- 2 15oz cans tomato sauce
- 2 tbsp bbq sauce
- 2 tbsp tamari
- 1 tbsp dark agave (or maple syrup)
- 1 tbsp mustard
- 1 tbsp paprika
- salt, pepper and cayenne pepper to taste

Preparation
Step 1
Bring the water and the lentils to a boil in a medium sized pot. Once boiling, reduce the heat to a simmer and place a lid onto the pot. Simmer for about 20 minutes, until the lentils are tender. Remove from heat and drain off any excess water and return to pot over low heat. Add in the remaining ingredients and simmer for about 10 minutes, tasting for salt and pepper along the way. Serve the lentil sloppy joes hot over rolls or with a spoon.
Store the lentil sloppy joes in the refridgerator for a couple days or freeze for later. I freeze them in 2 cups portions and just remove them when I need them. They reheat quickly, even from frozen.
