Ingredients
- 2 tbs butter
- 2 tbs olive oil
- salt/pepper
- 2 boneless chicken breasts, skin on
- 2 shallots, peeled and minced
- 1 garlic clove, peeled and minced
- 2 tbs blackpeppercrns crushed
- 1/2 c vermouth or white wine
- 1/2 c orange juice

Preparation
Step 1
Heat a med skillet over med heat
add butter and oil
season chicken with salt and pepper and add to the pan, skin side down
sear until they are well browned, about 10 mins and then turn them and finish cooking for about 8 mins
when they are done, remove to a plate and reserve
Pan Sauce:
add onion and garlic to the same pan and saute for a few minutes until they are softened and begin to caramelize
add wine and reduce it by half
add orange juice and continue to reduce until the sauce has a syrup-like consistency, about 10 mins.
slice chicken breasts on the bias, and arrange on a small serving platter. Pour sauce over them and serve
garnish with springs of thyme and parsley or taragon
