Ingredients

  • Topping:
  • 1 1/2 C whole wheat flour
  • 1 1/4 C oatmeal, ground
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 egg
  • 1 egg white
  • 1 C buttermilk
  • 2 T oil
  • 1 C brown sugar
  • 2 tsp. vanilla
  • 2 C chopped rhubarb
  • 1/4 C chopped nuts, toasted
  • 2 tsp. butter
  • 1/4 C chopped nuts, toasted
  • 1 T whole wheat flour
  • 1/3 C brown sugar

Preparation

Step 1

Preheat oven to 350°. Grease two loaf pans.

Sift together the flour, oatmeal, baking soda, salt & cinnamon in a bowl.

In another bowl, beat the egg & egg white, buttermilk, oil, brown sugar & vanilla. Stir in the dry ingredients all at once, just until moistened. Stir in rhubarb & nuts. Spoon batter into the prepared pans.

To make topping, mix together the butter, nuts, flour & brown sugar. Spread evenly over the top of both loaves. Bake for about 50 minutes. Bread is done when a sharp knife inserted into the center comes out clean.
