Orzo Salad

  • 1 cup of orzo pasta
  • 1 seedless cucumber
  • Halved cherry or small tomato
  • Fresh dill about 1 tablespoon chopped
  • Crumbled feta cheese
  • Dressing
  • Lemon juice and some zest
  • Red wine vinegar about 3 tablespoons
  • Tablespoon of honey
  • Salt and pepper
  • Olive oil



Step 1

Cook pasta, meanwhile chop cucumbers, dill and tomatoes and add to a bowl with feta. Make dressing whisking the first 5 ingredients and then slowly adding the olive oil. Drain orzo and let cool then combine with other ingredients.
