Chewy Chocolate Coconut Macaroons

Ingredients

  • 2 oz unsweetened chocolate, chopped
  • 1/2 cup sifted cake flour
  • 2 tbsp unsweetened cocoa
  • 1/8 tsp salt
  • 2 1/2 cups lightly packed, flaked, sweetened coconut
  • 1 tsp vanilla
  • 1 (14 oz) can sweetened condensed milk

Step 1

Heat oven to 250. Line baking sheet with parchment paper. Microwave chocolate for 1 minute or til almost melted. Stir til melted. Combine cake flour, cocoa, and salt in a large bowl. Add coconut; toss well. Stir in chocolate, vanilla and condensed milk. The mix will be stiff. Drop by tbsp 2 inches apart on baking sheet. Bake 45 minutes, rotating after 20 minutes. Remove from oven. Cool the pan on a wire rack for 10 minutes. Remove cookies. Cool completely on wire rack. Store in airtight container.
