[Turkey] Pita with Tzatziki

Ingredients
- 2 T EVOO
- 1.5 lbs boneless, skinless turkey cutlets
- 1/4 t cayenne pepper
- Kosher salt & black pepper
- 1 c low-fat Greek yogurt
- 1 cucumber, seeded & grated (about 1.25c)
- 1/4 c chopped fresh mint
- 1/2 small clove garlic, finely chopped
- 4 flat breads or pocketless pitas, warmed
- 1 small romaine heart, leaves torn if large
- 8 cherry tomatoes, quartered

Step 1
1. Heat EVOO in a lg skillet over med-high heat. Season the [turkey] w/the cayenne, 1/2t salt, & 1/4t black pepper. COok until cooked through, 6-7min per side. Cut into bite-size pieces.
2. Meanwhile, in a med bowl, mix together yogurt, cucumber, mint, garlic, 1/2t salt, & 1/4t black pepper.
3. Top flat breads w/romaine, [turkey], tomatoes, & tzatziki.
