PIE, BANANA CREAM

Ingredients
- 1/3 cup flour
- 2/3 cup sugar
- 1/4 tsp. salt
- 2 cups milk, scalded
- 3 slightly beaten egg yolks
- 2 Tbls butter
- 1/2 vanilla extract
- 1 9" baked pie shell (uncooked pie shell is baked at 450 degrees for 15 minutes, watch that bottom doesn't burn)

Details
Preparation
Step 1
Mix flour, sugar and salt.
gradually add milk.
Cook in double boiler until thick, stirring constantly.
Slowly add small amount of hot mixture to egg yolks.
Stir into remaining hot mixture.
Cook 2 minutes.
Cool and add butter and vanilla.
Slice 2-3 ripe bananas in cooled pie shell.
Pour filling over bananas.
Top with Meringue.
Bake in 350 degree oven for 12-15 minutes.
