STUFFING (GRANNY'S PORKSAUSAGE)

Ingredients

  • 1/4 chopped green pepper
  • 1/4 chopped red pepper
  • 2 stalks celery, sliced thin
  • 1 chopped medium onion.
  • 3 lbs Jimmy Dean Pork sausage
  • 1 1/2 - 2 loaves bread, cubed and toasted
  • 1 large can chicken broth
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp rosemary
  • OPTISIONAL: 1 can drained, sliced water chestnuts

Preparation

Step 1

Brown pork sausage, which has been crumbled into small pieces.
add vegetable and sauté, drain grease.
combine in large mixing bowl, cubed bread and some of the chicken broth until bread is completed soaked with the broth.
With your hands, squeeze out as much of the broth as you can.
With a slotted spoon (so you don't get any grease)add sausage and vegetables.
Add thyme, oregano & rosemary(or you can substitute 1 heaping tbls poultry seasoning for these 3 seasonings).
If desired, added water chestnuts.
Mix all ingredients together with your hands to make sure all pork sausage is broken into small pieces. Taste and add more seasonings as desired. Makes enough for 1 large turkey or can be separated for roasting checkens, Cornish hens or 2 small turkeys.
