Ingredients

  • 8

    oz dry soba noodles or somen

  • 3/4

    cup shredded carrots

  • 1/2

    c chopped peanuts

  • 1/4

    cup chopped green onion

  • 1

    TBS toasted sesame seeds

  • Dressing

  • 6

    TBS rice vinegar

  • 4-6

    TBS sugar

  • 1/4

    cup soy sauce

  • 1/4

    cup sesame oil

Directions

Cook noodles and drain well. Add other ingredients and toss. Mix together dressing and pour over pasta. Mix well, cover with foil or saran and refrigerate for a minimum of 1 hr.
