Pasta - Rapini and Sausage - Pascento

Ingredients

  • 2 bunches broccoli rabe (rapini) or spinach, thick ends removed
  • 8 links turkey sausage
  • 1/4 cup olive oil
  • 5 garlic clo9ves, thinly sliced
  • Black pepper
  • 1 teaspoon crushed red pepper
  • 1-pound thin linguine
  • Freshly grated Parmesan cheese

Preparation

Step 1

Cut the rapini into bite-size pieces. Boil for 8 minutes. Drain and set aside.

Sauté the sausage in a little oil until brown and cooked through. Set aside.

In a heavy skillet, sauté the garlic in some oil, black pepper, and crushed red pepper until the garlic is tan. Add the rapini and cook for 8 minutes.

Meanwhile, cook the linguine until al dente. Add ½ cup pasta water to the rapini. Drain the pasta and put in individual bowls. Top with the rapini sauce and sausage. Serve with Parmesan.
