Ingredients

  • 1/2 cup coconut flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 6 eggs
  • 1/4 cup raw honey
  • 3 bananas
  • 1/3 cup coconut oil OR clarified butter
  • 1 teaspoon vanilla extract
  • 1 cup walnut pieces OR chocolate chips

Preparation

Step 1

1. Preheat oven to 350 degrees F.
2. In a small bowl, combine coconut flour, salt and baking soda.
3. In a blender, puree the 3 bananas
4. In a large bowl mix the eggs, honey, bananas, coconut oil and vanilla until well blended. Mix dry ingredients into the wet, blending with a hand mixer or by hand. Gently fold in walnut pieces.
4. Place batter in non-stick muffin tins lightly greased.
5. Bake in preheated oven for 20-25 minutes.
