Ingredients

  • 1/4 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1/4 t. salt
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 1 t. baking soda
  • 1 c. flour
  • 2 T. hot water
  • 1 t. vanilla
  • 1/2 c. chopped nuts
  • 2-1/2 c. pared, cubed apples
  • 1/2 c. butter
  • 3/4 c. brown sugar
  • 1/4 c. cream
  • 1/2 t. rum-flavored extract or 1-2 T. rum

Step 1

Cream together shortening and sugar. Add remaining ingredients in order listed. Mix well. Pour into greased, 9-inch round, cake pan or pie plate. Bake at 350 degrees for 45-60 minutes. (Can be frozen. Thaw well before adding sauce.) Serve with warm rum sauce.

To prepare sauce, melt butter. Add brown sugar, and boil 1 minute. Add cream, and boil a few more seconds. Remove from heat. Stir in rum extract or rum.
