Creamy Wine Poached Salmon

Ingredients
- 1 Tbs. butter
- 6 salmon fillets
- 1 cup dry white wine, divided in half
- 2 Tbs. fresh parsley chopped
- 2 scallions, chopped
- 1/2 lemon, juiced
- 1 Tbs. honey
- Salt and pepper
- 1/4 cup light sour cream
- 1 Tbs. Dijon Mustard
- 1/2 tsp. dried tarragon

Preparation
Step 1
In a large skillet melt butter ad sear salmon on both sides - 5 minutes on each side.
Then add 1/2 cup wine, parsley and scallions.
Cover and cook until cooked through about 10 minutes.
Remove salmon.
Raise heat and add lemon, honey, sour cream,mustard and tarragon with remaining wine.
Then simmer, stirring until sauce is thick.
Remove from heat and pour over salmon.
