Ingredients
- 2 Lbs of fresh crab meat
- 3 eggs
- 1 cup of Hellmann's mayonnaise
- 1 tablespoon light cream
- 1/2 cup corn
- 1/2 cup diced red pepper and scallions
- 1 teaspoon cayenne pepper
- 1/2 cup Panko crumbs
- 1 cup Italian bread crumbs
- 1 lemon zested and juiced
- Vegetable oil for frying

Preparation
Step 1
In a bowl, combine, the crab meat, eggs, mayonnaise and light cream.
Add the corn, red pepper, scallions, cayenne pepper, Panko crumbs, Italian bread crumbs, lemon zest and lemon juice. Mix well and form into patties.
Heat frying pan on medium heat with vegetable oil. Pan fry the patties until golden brown - about 5 minutes each side.
