Ingredients

  • 1 1/2 lbs lean ground pork
  • 2 large shallots, minced
  • 3 cloves garlic, minced
  • 1 T. olive oil
  • 1 lb 12 oz can diced tomatoes
  • 1 medium eggplant, peeled and cubed
  • 3 cups fresh spinach
  • 1 t. dried thyme
  • 1 T. dried oregano
  • 1 T. dried basil
  • 2 t. onion powder
  • salt and pepper

Preparation

Step 1

In a large skillet, heat oil on medium heat. Saute onions for about 1 minute. Add garlic, meat and spices and cook until meat is browned. Add eggplant and tomatoes. Cover and cook for about 15 minutes. Add spinach and cook just until it starts to wilt.
