Turkey in Red Pepper Sauce

Ingredients
- 3 red peppers
- Salt & ground pepper
- 1 t minced garlic
- 1/2 C chicken broth
- 1 C lo-fat plain yogurt
- 1 1/2 lb. turkey tenderloins
- 2 T EVOO
- 1/2 C chopped green onions
- 1/4 C white wine
- 2 T chopped parsley

Step 1
Blacken peppers; peel & seed. Transfer to food processor & puree until smooth. Season turkey with salt & pepper. Heat oil over mod heat. Add turkey & sauté`until golden, @ 4 min per side. Push turkey to one side of skillet. Add garlic & onion; cook tip tender. Rearrange turkey & add chicken broth, wine, salt & pepper. Bring to boil; reduce heat to lo, cover & simmer, @ 5 min. Transfer turkey to platter; increase heat to high. Reduce liquid to ! 1/4 C. Stir in red pepper puree & green onions; heat thru. Stir in yogurt, heating thru but not boiling. Pour sauce over turkey; sprinkle with parsley & serve.
