Roast and Vegetables with Horseradish Cream

Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pork loin roast
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound red potatoes, cut in half
  • 1 onion, chopped
  • 3 carrots, cut into 2-inch pieces
  • 15 ounce can beef broth
  • 1/2 cup sour cream
  • 1 tablespoon prepared horseradish
  • 1/8 teaspoon pepper

Step 1

Heat oil in a large skillet over medium-high heat. Sprinkle roast with salt and pepper. Add roast to the skillet and brown on all sides, about 10 minutes total. Transfer roast to a 3 to 4 quart slow cooker. Add potatoes, onion, carrots, and broth. Cover and cook on low 8 to 10 hours or until very tender. Meanwhile, combine sour cream, horseradish, and pepper in a small bowl. Thinly slice roast to serve. Serve roast with vegetables and horseradish cream.
