Shrimp & Chive Crostini

Ingredients
- 1 Baguette, cut into 24 1/2-in. thick diagonal slices
- 24 Fresh or Frozen Lg. Shrimp in Shells
- 1 15oz. Can Cannellini ( White Kidney ) Beans, rinsed & drained
- 1/2 C. Yellow Sweet Pepper, finely chopped
- 3 Tbsp. Snipped Fresh Chives
- 2 Garlic Cloves, minced
- 1/3 C. Mascarpone Cheese or Cream Cheese
- 1/4 tsp. Salt
- Freshly Ground White Pepper
- Fresh Chives, cut into 1/2-in. pieces

Preparation
Step 1
Arrange baguette slices on baking sheet. Lightly brush one side of slices with olive oil. Bake in a 400 oven for about 8 min. or till lightly browned, turning once. Cool. Meanwhile, peel & devein shrimp, leaving tails intact. Rinse shrimp & pat dry with paper towels. In a lg. saucepan, cook shrimp in a lg. amount of boiling, salted water for 1-3 min. or till shrimp are opaque; drain. Rinse shrimp with cold water; drain again. Cover & chill till needed. Meanwhile, in a food processor, combine beans, sweet pepper, snipped chives & the garlic. Cover & process for 1-2 min. or till mixture reaches a creamy consistency. Add mascarpone cheese, salt & white pepper. Cover & process till well mixed. Spoon approx. 1 rounded tsp. of the bean mixture onto each crostini slice & top with a shrimp. Garnish with chive pieces. Serve.
