Broccoli Chicken Bowls

Ingredients

  • 1 1/2 C rice
  • 3 cloves garlic, thinly sliced
  • 3 T soy sauce
  • 2 T sugar
  • 1 1/2 T cornstarch
  • salt and pepper
  • 3/4 pound chicken breasts, thinly sliced
  • 3 T olive oil
  • 1 bunch broccoli, trimmed and thinly sliced
  • 2 green onions, white and green portions sliced separately

Step 1

Cook rice.

In a medium bowl, whisk together half of the garlic, soy sauce, sugar, and 1/2 T cornstarch. Season with salt and pepper. Add the chicken and toss; let stand for 20 minutes. In a small bowl, whisk together 1/2 C water and remaining cornstarch.

In large skillet, heat 1 T olive oil and remaining garlic over medium-high heat. Add broccoli, season with salt and pepper and cook for 1 minute. Add 1/4 C water, cover and steam until tender-crisp, 3-4 minutes. Transfer broccoli to a plate.

Add remaining 2 T olive oil to skillet and heat until hot. Add chicken mixture and whites of the onions and cook, stirring, until the chicken in just cooked through. Stir in the broccoli, then stir in the remaining cornstarch mixture. Cook until liquid thickens, about 30 seconds. Remove from heat and stir in green onions. Serve with rice.
