Ingredients

  • 4 tblsps. olive oil
  • 1/3 lb. Prosciutto, diced
  • 1/4 cup Onions, diced
  • 3 cloves of garlic, minced
  • 1 can ("Nina"or "Luigi Vitelli"35oz.) Italian whole peeled plum tomatoes
  • 1 Pomi strained tomatoes
  • 4 oz. heavy cream
  • 3 oz. + 1 oz. inexpensive Vodka
  • 1/4 cup Reggiano Parmigiano cheese
  • 1/3 tsp. pepper
  • 3/4 lb.s of Rigatoni or Penne Pasta
  • I double everything except for vodka, then froze.

Preparation

Step 1

In large pot bring water to a boil. In large deep frying pan heat olive oil then add prosciutto, onion and garlic. Saute' this until garlic is light brown. Remove from heat then add 3 oz. of vodka. Return to heat for 3 minutes then add tomatoes and break them up with wooden spoon. Bring to a boil and simmer for 15 minutes. Now add cream. Bring sauce back to a boil add 1 oz. vodka and pepper. Put pasta in bowls put auce on top then add cheese.
