Ingredients
- 1 cup diced firm ripe mango
- 1/4 cup finely diced red onion, soaked briefly in ice water and drained
- 2 tablespoons finely diced red bell pepper
- 3 tablespoons fresh lime juice
- 1 teaspoon finely minced jalapeno chile or to taste
- 2 teaspoons peeled and minced fresh ginger
- 2 teaspoons olive oil
- 2 teaspoons coarsely chopped fresh cilantro leaves
- Salt to taste
- Drops of honey to taste

Preparation
Step 1
1. Combine all ingredients and set aside for 30 minutes before serving to allow flavors to meld. Can be stored in refrigerator up to 2 days.
