Ingredients

  • 1 cup diced firm ripe mango
  • 1/4 cup finely diced red onion, soaked briefly in ice water and drained
  • 2 tablespoons finely diced red bell pepper
  • 3 tablespoons fresh lime juice
  • 1 teaspoon finely minced jalapeno chile or to taste
  • 2 teaspoons peeled and minced fresh ginger
  • 2 teaspoons olive oil
  • 2 teaspoons coarsely chopped fresh cilantro leaves
  • Salt to taste
  • Drops of honey to taste

Preparation

Step 1

1. Combine all ingredients and set aside for 30 minutes before serving to allow flavors to meld. Can be stored in refrigerator up to 2 days.
