Ingredients
- 5 ears sweet corn (2 1/2 C corn kernels), husked & silk removed
- 1/2 C red onion, diced
- 3 T apple cider vinegar
- 3 T olive oil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. granulated garlic powder
- 1 red pepper, diced
- 1/2 C fresh basil, chopped

Step 1
Scrape the corn kernels from the ears of corn. Bring a large pot of water to a boil. Add the corn kernels to the boiling water. Bring water back up to a boil. Immediately remove the pot from the heat & drain corn into a colander. Run cold water over the corn & drain thoroughly.
In a large bowl, gently combine the corn kernels, red onion, vinegar, olive oil, salt, pepper, garlic, red pepper & basil. Adjust seasonings to taste. Refrigerate at least 30 minutes before serving.
