Ingredients

  • 3 med tart apples, peeled and cut into 1/4 in slices
  • 3 T plus 1 c sugar, divided
  • 1 t cinnamon
  • 2/3 c butter, softened
  • 4 eggs
  • 1 t vanilla
  • 2 c flour
  • 1/8 t salt

Preparation

Step 1

In a large bowl, combine the apples, 3 T sugar and cinnamon; let stand for an hour.

In another bowl, cream butter and remaining sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth.

Transfer to a greased 9x5 loaf pan. Push apple slices vertically into batter. Place them close together.

Bake at 300 for 1 1/2 to 1 3/4 hr or until toothpick comes out clean. Cool for 10 min before removing from pan. Serve warm.
