Cinnamon Butternut Squash Muffins
- Optional topping:
- 1 banana, mashed
- 1 cup cooked butternut squash
- 4 eggs
- 1/3 cup applesauce
- 1/3 cup sugar
- 6 T. oil
- 1 t. salt
- 1 t. baking soda
- 2 t. baking powder
- 2 t. cinnamon
- 2 cup GF flour mix
- 1 t. cinnamon
- 1/4 cup brown sugar
banana, squash, eggs, applesauce, sugar and oil until well blended.
In a separate bowl combine salt, baking soda, baking powder, cinnamon and GF flour mix.
Add dry ingredients to wet ingredients and mix until batter forms.
Pour into greased baking cups/muffin tins and sprinkle with brown sugar-cinnamon topping.
Bake at 350* for 15 - 18 minutes.
