Sesame Pulled Pork sandwiches

Ingredients

  • 12 oz. bottle of beer
  • 6 oz. can tomato paste
  • 1/4 C. packed brown sugar
  • 1/2 C. rice vinegar
  • 3 Tbs. sesame oil, divided
  • 1 Tbs, soy sauce
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tsp. dried mustard
  • 1 whole star anise
  • 3 lbs, pork tenderloin, cut into 2" chunks
  • 1-2 tsp. hot sauce
  • salt adn pepper to taste
  • 6 bulky rolls or other burger buns
  • sesame seeds to garnish
  • sliced scallions to garnish

Step 1

In large sauce pan, whisk tyogether beer, tomato paste, brown sugar, vinegar, 2 Tbs. sesame oil, soy sauce, garlic powder, and mustard powder. Add the star anise and the pork. Bring to a simmer over med. high heat, then cover and cook until very tender, about 40 mins. Discard the anise, then use 2 forks to shred the pork. Stir in remaining Tbs. of seame oil and hot sauce. Season with salt and pepper. Divide pork between the buns, sprinkling each with seeds and scallions.
