Shrimp: Sweet and Spicy

  • 1 lb plus 2 oz peeled and deveined large shrimp
  • 1 1/2 t Cajun seasoning
  • 2 t olive oil
  • 1/2 c orange juice
  • 1/4 c apricot preserves
  • 2 c hot cooked rice
  • Chopped green onions

Step 1

Combine shrimp and seasoning. Toss to coat. Set aside. Heat oil in a large nonstick skillet over medium high heat. add shrimp; sauté 3-4 minutes or until done. Remove shrimp from pan and keep warm. Add orange juice and preserves to pan. Cook 4 min or until sauce is slightly thick, stirring occasionally. Serve shrimp over rice, tip with green onions. 4 servings ½ c rice and ¾ c shrimp mixture. 322 calories.
