Ingredients
- 1 can (28 oz.) diced tomatoes, undrained
- 1 can (8 oz.) tomato sauce
- 1 tbs. sugar
- 2 tsp. garlic powder
- 2 tsp. Italian seasoning
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 2 tbs. olive oil
- 1 pd. zucchini or yellow squash, sliced
- 1 pkg. (8 oz.) sliced mushrooms
- 1 small onion, chopped
- 6 oz. pasta, such spaghetti or linguine
- Shredded Parmesan cheese

Preparation
Step 1
Mix tomatoes, tomato sauce, sugar, and seasoning in medium saucepan. Bring to boil on medium heat. Reduce heat to low; cover and simmer for 20 minutes.
Heat oil in large skillet on medium- high heat. Add zucchini, mushrooms and onion; cook and stir 4 minutes or until vegetables are tender - crisp. Stir vegetables into tomato sauce.
Meanwhile cook pasta, drain and place in serving bowl. Add vegetable mixture; toss well. Sprinkle with Parmesan cheese.
