French Onion Soup

Ingredients

  • 2 large sweet onions, thinly sliced
  • 2 large white onions, thinly sliced
  • 2 quarts of beef broth
  • 8 tbs unsalted butter
  • 2 garlic cloves, chopped
  • 2 bay leaves
  • 2 fresh sprigs thyme
  • 1 cup dry white wine
  • 3 tbs flour
  • 1 loaf French bread, sliced
  • 1/2 pound Gruyere, Provolone or Swiss, grated
  • parsley
  • pinch of salt & pepper

Preparation

Step 1

Preheat oven to 350 degrees

over medium heat, melt butter in large pot.
add onions, garlic, bay leaves, thyme, salt and pepper.

Cook until onions are soft, about 25 minutes.

Add wine and bring to a boil

Reduce heat and simmer until wine has evaporated and onions are dry, about 5 minutes.

Remove bay leaves and thyme sprigs. Add flour and stir. Cook 10 minutes on low heat.

Add broth and simmer.

Cook for another 10 minutes.

Add Salt and Pepper to taste.

Place bread on baking sheet and toast turning once.

Turn over to broil. Ladle soup into bowls and place bread in bowls and top with cheese. Broil until golden brown and bulling about 2 -3 minutes.
