Tsuyu - Broth/Sauce for Soba Noodles

Ingredients

  • 200 ml soy sauce
  • 400 ml water
  • 150 ml mirin
  • 1 tbsp sugar
  • 25 g bonito flakes (katsuobushi)
  • 2 x 6 in piece of Kombu seaweed

Preparation

Step 1

In medium pot heat water, soy sauce, and sugar until it boils.
Turn down to low heat and remove any scum from surface.

Add bonito flakes and kombu and turn up again until boiling. As soon as it boils turn off heat. Add mirin and let sit for 10 minutes. Strain and refrigerate.
