Artichoke Balls

Ingredients
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 (8oz) can artichoke hearts, drained and chopped
- 2 eggs slightly beaten
- 1/2 teaspoon cayenne
- 1/2 cup grated parmesan cheese
- 1/2 cup italian seasoned bread crumbs

Preparation
Step 1
Saute garlic in oil, but do not allow garlic to brown. Add artichokes, eggs and cayenne and cook on low for 5 minutes. Remove from heat and add parmesan cheese and bread crumbs. Roll mixture into balls and roll in second mixture of cheese and bread crumbs. Chill and serve.
(may add cheese and bread crumbs separately)
