applesauce cookies

Ingredients

• 1 cup shortening
• 2 cups brown sugar
• 2 eggs
• 1/2 cup cold coffee
• 2 cups applesauce(drained)
• 3 1/2 cups flour
• 1 tsp soda
• 1 tsp salt
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1 tsp cloves
• 1 cup raisins
• 1/2 cup coarsely chopped nuts or oatmeal

Preparation

Step 1

mix shortening, sugar and eggs. stir in coffee and applesauce. mix dry ingredients and stir in applesauce mixture. stir in raisins and nuts. chill dough if it seems soft.

bake by rounded tablesponsful about 2 inches apart on lightly greased baking sheets. bake 9-12 minutes in preheated 400 degree oven or until firm.

makes 7-8 dozen cookies
