Steamed Fish in Parchment

Ingredients

  • 2 - 13 " x 16" parchment
  • 1 green onion, only use white and light green
  • 2 carrots, cut into matchsticks
  • 2 fish, thawed
  • 1/2 tsp salt
  • pepper
  • 1 red pepper, thinly sliced
  • 2 tsp olive oil
  • 1/2 cup dry white wine, divided
  • 1 lemon, cut into 4 wedges

Preparation

Step 1

Preheat oven to 425º. Fold each sheet in half, open up and divide half the onion, pepper and carrots on right side. Place fillet over bed of vegetables.

Drizzle with olive oil and wine. Fold left side over and tightly roll edges closed like a paper bag. Transfer to baking sheet and cook on lowest rack for 15 minutes.

Serve each with a lemon wedge.
