Bay Country Oysters and Fish

Ingredients

  • 1/4 cup margarine or butter
  • 1 cup onion, finely chopped
  • 1 pound fish fillets cut into 4 pieces
  • 1 4-ounce can sliced mushrooms
  • 1/2 pint (8 ounces) shucked oysters, drained but save liquor
  • 1/2 cup liquid (juice and liquor from mushrooms and oysters)
  • 1/4 cup dry sherry
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Step 1

In large Cast Iron Skillet melt margarine or butter. Sauté onion until glazed 8 to 10 minutes. Spread onions evenly on skillet. Lay fillets over onion. Drain mushrooms, reserve liquid. Spread mushrooms over fish. Mix sherry, salt, pepper and mushroom and oyster liquids. Pour over fish and mushrooms. Cover and simmer until fish flakes easily when tested with a fork. 5 to 8 minutes. Place oysters in pan juices and fish and simmer, uncovered, basting frequently, until edges of oysters curl, about 5 minutes.
