Ingredients

  • 16 ounces Barilla elbow noodles
  • 2 tablespoons butter
  • 3 1/2 tablespoons all-purpose flour
  • 1/2 cup cream
  • 1 1/3 cups half-and-half
  • 1/3 cup grated Parmesan
  • 1/3 cup grated mozzarella
  • 1/3 cup grated Cheddar
  • 1/3 cup grated smoked Gouda
  • 1/2 teaspoon salt
  • 1/4 teaspoon café-grind black pepper
  • 1 1/2 cups cooked bacon pieces
  • 1 1/2 cups blue cheese crumbles

1. Set oven to 350 degrees.

2. Cook noodles. In a large pot of well-salted water, cook noodles until al dente. Drain, reserving some cooking water.

3. Make cream sauce. In a large pot, melt butter on medium heat. Stir in flour until smooth, cook, stirring continuously. to achieve a roux light tan in color. A quarter-cup at a time at first, stir in cream, whisking well to incorporate each addition before adding another. Stir in half-and-half. Stirring often, bring just to a simmer, then let gently simmer for about 10 minutes or until mixture thickens. Stir in cheeses until melted; season with salt and pepper.

4. Make mac-n-cheese. Stir cooked noodles into cream sauce. If needed, loosen the sauce with cooking water. Stir in bacon and blue cheese.

5. To serve TwinOak-style, portion 1 ¼ cups mac-n-cheese into large oven-safe ramekins. Place in a 350-degree oven until hot and bubbly, about 15 minutes.
