  • 9 "unbaked pie crust
  • 3-4 cups rhubarb, diced
  • 2-3 eggs (I like 2)
  • 1 1/4 cup sugar
  • 1/4 tsp. salt
  • 2 Tbsp. flour
  • 1 tsp. vanilla
  • 1 cup milk

Preparation

Step 1

Heat oven to 425 degrees. Put rhubarb on bottom of crust. Beat remaining ingredients and pour over rhubarb. Bake 25 minutes.

Reduce heat to 325 degrees and bake 35 minutes
