Veggie Stuffed Chicken Breast

Ingredients

  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. Mrs. Dash Garlic powder
  • 4 boneless skinless chicken breast
  • 2 Tbs. grape seed oil
  • 1 cup cherry tomatoes, halved
  • 1 onion, sliced
  • 1 cup fresh spinach

Step 1

Pour grape seed oil into a skillet on medium heat. Place the onions, tomatoes and spinach into the pan and sauté for about 5 minutes until onions are soft. Carefully cut out a "pocket" in the chicken breast and fill with the mixture from the skillet. Use a toothpick to make sure the breast stay together.
Spray baking pan with fat-free cooking spray. Season the chicken with salt, pepper, and garlic powder and place in the baking pan. Bake at 400 for 30-45 minutes or until the chicken is cooked through. Remove toothpick and serve.
