Radish & Herbed Goat Cheese Sandwiches

Ingredients

  • 1 6-oz bag radishes
  • 1 6-oz tube garlic and herb goat cheese
  • 12 slices appetizer-size pumpernickel bread (like Pepperidge Farm Party)
  • 1/4 c watercress

Preparation

Step 1

Thinly slice radishes using a mandolin, sharp knife or vegetable peeler. Set aside.

In a small bowl, mash goat cheese with a fork.

Cut crusts off bread slices and set aside.

Use a small offset spatula or knife to spread a bit of goat cheese on each piece of bread. Evenly distribute radish slices over bread, overlapping them slightly. Use a dab of goat cheese to glue a few sprigs of watercress to the top of each, then cut bread in half crosswise to form triangles.
