Chicken Noodle Casserole

Ingredients

  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 2 TBSP lemon juice
  • 2 cups chicken -- cubed,cooked
  • 1 small onion -- chopped
  • 1/4 cup green pepper -- chopped
  • 1/4 cup sweet red pepper -- chopped
  • 1 cup monterey jack cheese -- shredded, divided
  • 1 cup sharp cheddar cheese -- shredded, divided
  • 12 ounces medium egg noodles -- cooked & drained

Preparation

Step 1

In a large bowl, combine soup, mayonnaise and lemon juice. Add the chicken,onion, peppers, 1/2 cup of monterey jack cheese and 1/2 cup of cheddar cheese; mix well. Add noodles and toss to coat.

Transfer to a greased 2 quart shallow baking dish. Bake, uncovered, at 350 degrees for 30-35 minutes. Sprinkle with remaining cheeses. Bake 10 minutes longer or until vegetables are tender and cheese is melted.

NOTES : I think I'd pre-cook onions and peppers, as well, before adding to casserole.
