Surprise Pudding (Rhubarb)

Ingredients

  • 4 c. fresh cut rhubarb
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. all bran
  • 3/4 c. sugar
  • 1/4 c. soft butter
  • 1/2 c. milk
  • 3/4 c. sugar
  • 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/2 c. boiling water

Preparation

Step 1

Spread rhubarb evenly in the bottom of an 8x8 baking dish.

Mix flour, baking powder, salt, all bran, sugar, soft butter, and milk and pour over rhubarb evenly.

Mix sugar, cornstarch and salt and sprinkle over batter.

Pour boiling water over top of all.

Bake for 1 hour between 350 and 375 degrees.
