Ingredients
- 10 lasagna noodles
- 2 cups fresh mushrooms, sliced
- 1/2 cup onion, chopped
- 1 tbsp vegetable oil
- 1 can (15 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1/2 cup black olives, chopped
- 1 1/2 tsp dried, crushed oregano
- 2 cups cottage cheese
- 1 lb fresh spinach, cooked and squeezed dry
- 1 lb Monterey Jack cheese, sliced
- 1/2 cup fresh parmesan cheese, grated

Preparation
Step 1
Cook Lasagna noodles.
In saucepan, cook mushrooms and onion in hot oil until tender, but not brown.
Stir in tomato sauce, tomato paste, olives, and oregano.
In a greased 9 x 13" baking dish, layer half of noodles, cottage cheese, spinach, monterey jack cheese, and sauce mixture.
Repeat layers, ending with several cheese slices on top.
Sprinkle with parmesan cheese
Bake at 375 degrees for 30 minutes
Let stand 10 minutes before serving
