Ingredients

  • Boil and Simmer; Combine:
  • 2 cups sugar
  • 1 cup water
  • 40 leaves of fresh mint
  • Boil sugar, water and mint leaves over medium-high heat until sugar dissolves, stir often. Reduce heat to medium and simmer for 2 minutes. Strain syrup, discarding solids and cool to room temperature.

Preparation

Step 1

Combine cooled syrup (created above) with the following into a large pitcher or punch bowl. Add ice.
1 liter club soda
4 cups white rum
2 cups fresh lime juice
2 cups pomegranate juice

Makes 13 cups. Total time: 20 Minutes
