Ingredients
- Saute :
- 3 T butter
- 1 C shallots
- Add:
- 1 C sherry
- 3 lb lobster meat
- 2 T pepper
- 1/2 C tomato paste
- Saute and add:
- 1 qt heavy cream
- 1 qt half and half
- 1 qt lobster stock

Thicken with 6 T rue (3 T butter and 3 T flour)
