Lobster Bisque

Ingredients

• Saute :
• 3 T butter
• 1 C shallots
• Add:
• 1 C sherry
• 3 lb lobster meat
• 2 T pepper
• 1/2 C tomato paste
• Saute and add:
• 1 qt heavy cream
• 1 qt half and half
• 1 qt lobster stock

Step 1

Thicken with 6 T rue (3 T butter and 3 T flour)
