Ingredients

  • 6 large tomatoes, washed, skinned and quartered
  • 1 2 tsp minced onion
  • 1/2 cup celery, chopped
  • 2 or 3 cloves
  • 3/4 tsp salt
  • 1/4 tsp paprika
  • 2 tsp white or brown sugar
  • 1/8 tsp curry powder
  • 1-2 tsp chopped basil, oregano or parsley
  • 1 Tbsp butter

Preparation

Step 1

1. Place the tomatoes in a large heavy pan. Cook over low to low-med heat for 20 minutes or so.
2. Add the onion, celery and cloves. Stir occasionally to keep them from scorching.
3. Season with salt, paprika, sugar, curry powder, herbs and butter.
