Ingredients
- 2 tablespoons extra virgin olive oil
- 6 oz pancetta or bacon, cut into thin strips
- 3 tablespoons finely chopped white onion
- 5 very plum(roma) tomatoes, peeled and coarsely
- chopped
- salt
- pinch of cayenne pepper
- 3/4 cup grated provolone cheese

Preparation
Step 1
In a frying pan over medium heat, warm the olive oil. Add the pancetta or bacon and fry until crisp, about 5 minutes. Using a slotted spoon, transfer to a small bowl, set aside.
Add the onion to the pan and saute, stirring, until tender, 3-5 minutes. Add the tomatoes and salt and cayenne pepper to taste. Cook uncovered, stirring occasionally, until the liquid evaporates and the sauce is slightly thickened and creamy, about 10 minutes.
meanwhile, cook your choice of pasta until al dente. Drain and transfer to a warmed serving dish. Immediately pour the hot sauce over the pasta, add the provolone and pancetta or bacon and toss well. Serve at once
