Slow-cooker Red Beans, Sausage, and Rice

Ingredients

  • 1 lb. dried red kidney beans
  • 1/2 lb to 1 lb smoked sausage thinly sliced
  • 3 stalks of celery chopped
  • 1 medium onion chopped
  • 3 cloves minced garlic
  • 1 Tbsp. Creole seasoning
  • 7 cups of water or beef broth, or combination of both
  • 3 cups rice cooked according to pkg. directions

Step 1

Soak beans in water over night. Using slow-cooker combine: all ingredients except rice and sausage. Put the cut sausage into cooker 1 hr. before done. Cover and cook on high for 7 hr. or until beans are tender. Serve in slallow bowls; place rice in bowl and laddle the red bean and sausage mixture over it.
