Sweet Potato Tots with Bacon & Mustard Dipping Sauce

For the sweet potato and bacon tots: Boil a pot of salted water
- Sweet Potato and Bacon Tots:
- Salt
- 2 large sweet potatoes, unpeeled
- 2 strips bacon
- 3 cups vegetable oil
- 3 heaping tablespoons all-purpose flour
- Creamy Mustard Dipping Sauce:
- 2 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper

Preheat oven to 425 degrees
- 5 sm Zucchini
- 4 Scallions (sliced, white and green parts separated)
- 1 sm Onion (chopped)
- 2 Plum Tomatoes (coarsely chopped)
- 2 tbsp Celery Leaves (from inner stalks, chopped)
- 4 tbsp chopped Basil Leaves
- 1/4 cup Olive Oil
- 1 tsp Sea Salt
- 1/2 tsp fresh ground Black Pepper

To make the crust: In a food processor combine the butter, flour, sugar, salt and lemon zest
- For the crust:
- 1 stick butter, cut into pea size pieces
- 1 cup all-purpose flour, plus extra for rolling
- 1/4 cup sugar
- Pinch salt
- 1 lemon, zested
- 1 egg yolk
- 2 to 3 tablespoons ice water
- For the filling:
- 1 cup sugar
- 1/4 cup apple cider
- 1/2 lemon, juiced
- 1 vanilla bean, seeds scraped
- 1 stick butter, cut into pats
- 6 apples, such as Golden Delicious, Granny Smith, McIntosh or your favorite baking apple, peeled, cored and quartered
