Corn-Tomato Chowder with Cucumber Relish

In a pot, bring 2 quarts water to a boil
- 5 ears corn, shucked
- 4 slices bacon
- 4 T butter
- 1 onion, chopped
- Pinch of salt
- 2 C tomatoes, chopped
- 1 t salt
- 1 cucumber, peeled and diced
- 2 T mint or basil, chopped
- 1 T olive oil
- 1/8 t each salt and pepper

Oven-Baked Sweet Potato Fries

- 1 1/2 lbs sweet potatoes, peeled and cut into 1/2 inch strips
- 1/4 cup oliv oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon dried Italian seasoning
Hoisin-Glazed Shrimp Skewers

Total Time: 15 Minutes Serve with seasoned cucumbers
- Seasoned Cucumbers:
- 16 Medium Shrimp (4 per skewer)
- 1/4 Cup Hoisin Sauce
- Sesame Seeds
- 1 Cucumber, sliced
- 2 Scallions, sliced
- 2 Tablespoons Rice Vinegar
- 2 Tablespoons Canola Oil
- Salt and Pepper
Zucchini-Pasta Salad

In a large saucepan cook cauliflower, covered in a small amount of boiling, salted water for 8 minutes
- 1 small head cauliflower, cut into small flowerets (1/2 pounds)
- 2 medium zucchini, halved and sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped green pepper
- 3/8 cup white wine vinegar
- 1/4 cup salad oil
- 1/8 cup sugar
- 1/2 tspn snipped dried basil, crushed
- 1/2 tspn salt
- 1/16 tspn pepper
- 1/2 small head lettuce, torn
- 8oz wide noodles, fettucini
- 1/4 cup grated parmesan cheese
Herb-Rubbed Pork Roast

- 2 tspn ground sage
- 2 tspn dried marjoram, crushed
