ELIZABETH’S CHOCOLATE CAKE

Cake Directions: Preheat oven to 350
- INGREDIENTS:
- 2 cups of flour
- 1 cup water
- 2 cups of sugar
- 2 eggs
- 1 cup (2 sticks)
- butter or marg.
- 1 teaspoon baking soda
- 1/2 cup buttermilk
- 4 tablespoons cocoa
- 1 teaspoon vanilla
- ICING:
- 1 stick (1/2cup) marg/butter
- 4 tablespoons cocoa
- 6 tablespoons milk
- 1 cup chopped pecans
- 2 cups powdered sugar
- 1 teaspoon vanilla

Ground oreos in food processor
- 1 lb Oreos ( I usually use more than 1 pound)
- 8 oz. cream cheese
- 1/3 cup butter
- 1 cup sugar
- 1 teaspoon vanilla (or more)
- 2 packages of instant pudding
- 12 oz. cool whip
- almond extract to taste
Pineapple- Mandarin Cake

1 box yellow cake mix (Betty Crocker) Follow instructions on box, except for water
- Topping:
- 1 box yellow cake mix (Betty Crocker)
- 12 oz. of crushed pineapple & drain
- "some mandarin oranges" medium size can?
- medium size container ( I think it was 12 oz. container) of whipped cream
- small box of instant vanilla pudding

- 16 oz. cream cheese
- 2 cups chopped nuts
- 1 teaspoon garlic powder
- dash salt
- chili powder
Swiss Chicken Cutlets

- 2 thin slices reduced-fat Swiss Cheese (about 2 oz. )
- 4 chicken cutlets (4 oz each), 1/4 inch thick
- 2 tablespoons all -purpose flour
- 1/2 teaspoon black pepper
- 1 tablespoon unsalted butter or margarine
- 1/2 cup reduced-sodium chicken broth
- 1/4 cup dry white wine or reduced-sodium chicken broth
- 1/4 teaspoon dried oregano
- Chopped fresh parsley and fresh oregano sprigs for garnish

Crust: Blend cream cheese & butter
- Crust:
- 3 oz package cream cheese (softened)
- 1/2 cup butter or margarine (1 stick-softened NOT MELTED)
- 1 cup flour (all purpose-not self-rising)
- Filling:
- 1 egg
- 3/4 cup brown sugar
- 1 teaspoon butter softened
- 1 teaspoon vanilla
- 2/3 cup coarsely broken pecans.
Lemon Pudding "Cakes"

Zest and juice lemons, to yield 1/2 cup lemon juice and 2 tablespoons zest
- 2 to 3 large lemons
- 5 tablespoons unsalted butter, softened, plus extra for greasing ramekins
- 3/4 cup sugar
- 3 large eggs, separated
- 3 tablespoons flour
- 2/3 cup whole milk
- water, for baking
- 6 strawberries, halved, for garnish
- mint sprigs for garnish
